Spiced Roasted BBQ Rum

Born during the season opening of the Dutch foundation NBBQW in 2018, the idea of garnishing cocktails with slices of smoked and crunchy bacon to combine it with grilled meat is a classic now here in Amsterdam.
During this event in 2018 Carlo Molon, executive chef of Sheraton Como Lake, suggested some marinates for meat with rum, bourbon and gin that gave rise to memorable pairings. We published in 2018 his recipes in our BBQ magazine VUUR. Thanks again Carlo.
Pairing a good spirit or cocktail with a piece of low & slow or hot & fast meat is the new trend now. That is because I try to make a special spirit dedicated to BBQ and specially to roasted beef and veal.
Designing a "spicy roasted rum" with notes of caramel and molasses was an amazing and positive note in this difficult and complex moment that Covid19 has given us. My Enzo's SPICED BBQ RUM is a blend of exotic spices with the finest Caribbean rums. This rum will give you the real "full-flavor". Characterful yet subtle, this rum balance the Caribbean stubborn storm at sea and rustic white sandy beaches.

I love Daiquiri. I love the original classic Hemingway’s daiquiri but also the many variations more or less known which results changing a bit the original recipe.
"There can be many combinations with Daiquiri" says Simone Pazzano, Italian food journalist "This cocktail goes well with both roasted meats and grilled fish.” He goes on to say: “Excellent even with a vegetable fry or delicate sweets, such as a yogurt cake.”

Last time I use a smoked Daiquiri with a "Veal Chop Italian Job", a great BBQ recipe with a sauce inspired by the work of Bartolomeo Scappi, a renaissance cook who cooked for princes and popes, such as Pius IV and Pius V, in Rome.

My journey in search of delicacies and excellences: Churro lambs by Hermanos Masa and Black Beef crossbreed Japanese-Iberian wagyu by La Finca Santa Rosalia. I promise myself to visit those two enterprises after talking about in October at SIAL Paris and January at SIRHA Lyon to Jose Ramon Masa and Patxi Garmendia.
